John's Gin Cocktail Masterclass recipes

John at the Aldeburgh Food & Drink Festival 2015Thanks to everyone who came to my Gin Cocktail Masterclass at the Aldeburgh Food and Drink Festival 2015, I hope that you enjoyed it. As promised, here are the recipes made on the day, as well as my top three cocktail-making tips.

Cocktail Masterclass tips:

1. Measure everything, if you don’t you could make the best drink you have ever had, and not be able to re-create it! 2. Don’t skimp on the ice, no, just don’t! 3. Always use fresh juice, it’s the law! If you're making your own sugar syrup the ratio is one part sugar to one part water. Heat both together until clear.

The Cocktails

Red Snapper 50 ml Gin 150 ml Tomato Juice 12.5 ml Lemon Juice 5 ml Dark Soy Sauce 4 Dashes Chipotle Sauce 4 Drips Tabasco Sauce Pinch of Celery Salt 2 grinds Black Pepper Stir with lots of ice and strain into a Highball glass. Garnish with a celery stick (hopefully you'll find a normal-sized version unlike the elephant-sized one that I had!) Gimlet 50 ml Gin 25 ml Sugar Syrup 25 ml Lime Juice Shake with ice and strain into a coupe glass. Garnish with a wedge of lime. G & Tea 50 ml Gin 50 ml Earl Grey Tea 25 ml Lemon Juice 25 ml Sugar Syrup Shake with ice and strain into a cocktail glass. Garnish with a cucumber spear. Salty Dog 50 ml Gin 100 ml Pink Grapefruit Juice Shake with ice and serve into salt-rimmed cocktail glass. Paddington Sour 50 ml Gin 25 ml Lemon Juice A barspoon of Orange Marmalade 25 ml Sugar Syrup 25 ml egg white (1 large ) Dry Shake or use a milk frother to amalgamate the egg and marmalade. Shake with ice and strain into a coupe glass. Add a couple of drips of Angostura Bitters on top for an aromatic garnish.
