John-Baker-and-Karen-Aldridge-at-Southwold-store-cafeThe brilliant chefs at the Southwold store café created this delicious spirits-based cake - a tantalising, mouth-watering, Limoncello Drizzle Sponge cake that you can make at home. The recipe is for a large gastro-tin, so if you're using a loaf tin or a regular square cake tin, then half the quantities - unless you REALLY love cake, that is!   Adnams Limoncello Drizzle Sponge Limoncello-and-limoncello-drizzle-cake-at-Southwold450g self-raising flour 350g caster sugar 350g butter 3 tsp baking powder 7 eggs 2 lemons - zest and juices 200ml Adnams Limoncello For the drizzle 200ml Adnams Limoncello 3 tbsp caster sugar Juice of 2 lemons How to make it: Mix all the cake ingredients together and beat for two minutes. Spoon the mixture into a lined baking tin making sure that it's level, then bake in a pre-heated oven at 180 degrees C for 35-40 minutes. For the drizzle, bring the Limoncello and sugar together to boil, and then lowly simmer while adding more lemon juice or Limoncello to your taste. Pour this over the cooked cake while it is still warm. Have fun! We'd love to see your photos if you've made your own cake. Share them with us on Instagram, Facebook or Twitter! Check out the new look Limoncello bottle!
