John-Baker-and-Karen-Aldridge-at-Southwold-store-cafeThe brilliant chefs at the Southwold store café created this delicious spirits-based cake - a tantalising, mouth-watering, Limoncello Drizzle Sponge cake that you can make at home. The recipe is for a large gastro-tin, so if you're using a loaf tin or a regular square cake tin, then half the quantities - unless you REALLY love cake, that is!   Adnams Limoncello Drizzle Sponge Limoncello-and-limoncello-drizzle-cake-at-Southwold450g self-raising flour 350g caster sugar 350g butter 3 tsp baking powder 7 eggs 2 lemons - zest and juices 200ml Adnams Limoncello For the drizzle 200ml Adnams Limoncello 3 tbsp caster sugar Juice of 2 lemons How to make it: Mix all the cake ingredients together and beat for two minutes. Spoon the mixture into a lined baking tin making sure that it's level, then bake in a pre-heated oven at 180 degrees C for 35-40 minutes. For the drizzle, bring the Limoncello and sugar together to boil, and then lowly simmer while adding more lemon juice or Limoncello to your taste.
