John from our Southwold Cellar and Kitchen Cafe has created this zesty cake packed full of flavour from our Copper House Gin, why not try something different this January and get baking. Just follow the recipe below...
What you will need:500g Butter500g Caster Sugar180ml Gin8 Eggs4 Juices of limes and rindA sprig of mint, finely chopped500g Self Raising FlourIcing: 250g Butter250g Cream Cheese100ml GinRind of one lime
Preheat your oven to 200 degrees C. Cream together the butter with the sugar and then add your eggs. Beat well before adding your Copper House Gin, mint and lime juice with the rind. Sieve in your self-raising flour before folding into the mixture. Cook for 30-35 minutes before cooling and then icing. For the icing, beat your butter and cream cheese together before adding Copper House Gin and the lime rind. Spread evenly on the cake once cooled and slice into portions. Now to enjoy!
