Description

Jean Pabiot and son Alain are the proud guardians of a winemaking tradition stretching back 6 generations. Their sizeable domaine comprises an enviable portfolio of chalky Sauvignon Blanc vineyards in Sancerre and Pouilly-Fumé. Wines from the latter perfectly express the appellation's classic smoky, minerally character. The grassy nuances and soft asparagus notes of this latest vintage leave nothing to be desired. Great with goat cheeses, oysters and baked cod.

Fines Caillottes

We have been savouring this wine over a number of recent vintages and it is now the go to PF. Subtle Sauvignon Blanc flavours - none of the slightly underripe herbaceous tones of the Marlborough - with fresh acidity and beautiful balance. The subtleness of flavour creates a fullness on the palate and the finish is fresh and long. The best example of PF I this price range. The 2021 holds its own against earlier vintages even at this youthful age.
