From Toro in north-western Spain, this is a sumptuous and sweetly spiced red made from tinta de toro, the local clone of tempranillo, which typically creates deeper, thicker wines than you find in Rioja. Full of the taste of cooked strawberries mingled with darker berries, it is enriched with soft flavours of vanilla, cinnamon, cloves and nutmeg from the French and American barrels in which it’s matured. It would suit some of the rich rice dishes in the Moro recipe book – the aubergine and tomato pilav or rice with pork, chorizo and spinach – as well as being lovely with lamb.
