Sitting at the heart of Domaine Chanson is a medieval Bastion, which is dedicated wholly to the ageing and safeguarding of wines from Chanson’s Premier and Grand Cru vineyards. The four-storey high structure, with 8-metre-thick walls, provides an exceptional atmosphere for the maturation of fine Burgundian wines, maintaining a constant level of temperature and humidity. It is one of only five such buildings still present in Beaune and has been in constant use since Domaine Chanson was founded in 1750.
 
Respecting the vine at every stage of the winemaking process is paramount for winemaker Jean-Pierre Confuron, as it allows for the most precise expression of terroir possible.
Whilst still paying homage to traditional winemaking, a new addition of a modern winery was developed in 2010, which allows juice and grapes to be transported by gravity, thus ensuring the preservation of aromas and flavours.
 
A period of thirteen months of oak ageing provides added complexity. Serve with grilled roasted red meat, or local cheeses such as Epoisses, Citeaux and Langres.
