Tio Pepe En Rama is here!

Tio Pepe En RamaSuper-fresh fino sherry, straight from the barrel without any clarification or winemaking jiggery-pokery. Get it while you can! Tio Pepe En Rama will only be on our shelves for a maximum of three months. Why? Firstly, because it’s a ‘live’ product, designed to be drunk as early as possible and secondly, as it's drawn from the heart of only from the very best Tio Pepe barrels, it’s a limited edition wine. It is as close as you can get to tasting sherry straight from the barrel without actually traveling to the Bodega in Jerez (which is highly recommended by the way - check out these pictures of this year's Feria on Flickr to see why). However, assuming you can't just leap on a plane, try En Rama for yourself and let us know what you think!

What does it taste like?

Winemaker Antonio FloresEn Rama is a yeasty, super-fresh, super-concentrated Fino, with a vibrant nose zinging with notes of almonds and fresh bread. Winemaker Antonio Flores remarks poetically that that it's 'the bottled sun of Andalucia'. Tio Pepe En Rama is produced from Palomino Fino grapes, and spends time going through the ‘solera system’ (in which wines of different years are fractionally blended in barrel) and is aged under a covering of ‘flor’ yeast. Fino sherry barrels are only filled to about four fifths capacity to allow flor yeast to grow on the surface, thereby protecting the maturing wine underneath from overt oxidation. This is how Fino retains its lovely pale lemon colour – if it was left without a covering of flor it would soon turn coppery-brown. Only the best barrels were selected for this year's En Rama. It was drawn off from the heart of the barrels this Spring after a mild winter when the flor yeast cover was at its thickest. It did not undergo any further clarification, you get exactly what has come out of the barrel – pure, fresh Fino sherry. The date of bottling is on the back label, so you’ll know when your three months are up! Serve chilled and once your bottle is open, keep it in the fridge, drink it within 3 days, and treat it like a white wine.
